Combine 1 cup lentils with 2½ cups water or broth in a saucepan. Add a pinch of salt.
Bring to a boil, then reduce to a gentle simmer.
Cook uncovered: green/brown lentils 20–25 min, red lentils 15–20 min, French lentils 25–30 min.
Drain any excess liquid and season. Do not add salt or acid until the end — it toughens the skins.
