Ingredients

  • 4 pork sausages (preferably chorizo)
  • 4 crusty bread rolls
  • 1 medium onion, finely chopped
  • 1 medium tomato, diced
  • 1 small green bell pepper, finely diced
  • 1 small red bell pepper, finely diced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: chili flakes for added heat

Instructions

  1. 1

Preheat your grill or barbecue to medium-high heat.

  2. 2

Grill the pork sausages for about 15-20 minutes, turning occasionally until they are cooked through and nicely browned.

  3. 3

While the sausages are grilling, prepare the salsa criolla. In a mixing bowl, combine the chopped onion, diced tomatoes, green bell pepper, red bell pepper, and parsley.

  4. 4

Add the red wine vinegar, olive oil, salt, and pepper to the vegetable mixture. Toss everything together until well mixed and set aside to let flavors meld.

  5. 5

Once the sausages are done grilling, remove them from the heat and let them rest for a couple of minutes.

  6. 6

Slice the bread rolls lengthwise and lightly toast them on the grill for 1-2 minutes, if desired.

  7. 7

Place a grilled sausage into each toasted bread roll and top generously with the salsa criolla.

  8. 8

Serve immediately and enjoy your Argentinian choripán!
