  • 1 tbsp olive oil
  • 2 medium sweet bell peppers (red, yellow, or orange), sliced
  • Fresh cilantro (for garnish, optional)

    In a bowl, whisk together honey, lime juice, minced garlic, ground cumin, paprika, salt, and black pepper to create the marinade.

    Place the chicken breasts in a large resealable plastic bag or shallow dish and pour 2/3 of the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Preheat the grill to medium-high heat. While the grill is heating, toss the sliced bell peppers with olive oil and a pinch of salt in a bowl.
