Ingredients

  • 12 canelones (dry)
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, grated
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 1/4 cup cream
  • 1/2 tsp nutmeg
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups marinara sauce
  • Fresh basil for garnish (optional)

Instructions

    Preheat the oven to 375°F (190°C).

    In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1 minute.

    Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat, and let cool slightly.

    In a bowl, combine ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, the egg, cream, nutmeg, salt, and pepper. Stir in the sautéed spinach.

    Fill each canelone with the spinach and cheese mixture using a spoon or piping bag.

    Spread a layer of marinara sauce on the bottom of a baking dish. Arrange the filled canelones in the dish, and cover with remaining marinara sauce.

    Sprinkle the remaining mozzarella and Parmesan cheese on top.

    Bake in the preheated oven for 25 minutes, or until bubbly and golden. Let cool for a few minutes before serving, and garnish with fresh basil if desired.
