Ingredients

  • 1 lb (450g) chicken tenders
  • 1 cup breadcrumbs (preferably whole wheat)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs
  • 1 tbsp olive oil
  • 1/4 cup honey
  • 1/4 cup Dijon mustard

Instructions

  1. 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. 2

In a shallow bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

  3. 3

In another bowl, beat the eggs and add the olive oil, mixing well.

  4. 4

Dip each chicken tender into the egg mixture, then coat it in the breadcrumb mixture, pressing gently to adhere.

  5. 5

Place the coated chicken tenders on the prepared baking sheet in a single layer.

  6. 6

Bake in the preheated oven for 25-30 minutes or until golden brown and cooked through, flipping halfway through.

  7. 7

While the chicken is baking, prepare the honey mustard dip by mixing honey and Dijon mustard in a small bowl until well combined.

  8. 8

Serve the baked chicken tenders hot with the honey mustard dip on the side.
