Preheat your oven to 400°F (200°C).
In a small bowl, mix together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
Place the halved baby potatoes on a baking sheet. Drizzle with half of the olive oil mixture and toss to coat.
Arrange the cod fillets on the same baking sheet and brush the remaining olive oil mixture over the top of each fillet.
Lay lemon slices on top of the cod fillets.
Roast in the preheated oven for 20-25 minutes, or until the cod is flaky and the potatoes are tender.
Remove from the oven and garnish with fresh parsley before serving.
