Ingredients

  • 4 fish fillets (such as tilapia or cod)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups rice (basmati or jasmine)
  • 4 cups water
  • Fresh coriander (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. 1

Preheat the oven to 375°F (190°C).

  2. 2

In a bowl, mix olive oil, lemon juice, garam masala, turmeric, chili powder, cumin, salt, and black pepper to create a marinade.

  3. 3

Place the fish fillets in the marinade, ensuring they are well-coated. Cover and let marinate for at least 15 minutes.

  4. 4

While the fish marinates, rinse the rice under cold water until the water runs clear. This removes excess starch.

  5. 5

In a pot, combine the rinsed rice and 4 cups of water. Bring to a boil then cover and reduce the heat to low. Cook for about 15-20 minutes until the rice is tender.

  6. 6

While the rice is cooking, place the marinated fish on a baking tray lined with parchment paper.

  7. 7

Bake the fish in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork.

  8. 8

Once done, fluff the rice with a fork and serve it alongside the baked fish. Garnish with fresh coriander and serve with lemon wedges.
