Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 1 lemon (zested and juiced)
  • 2 tbsp fresh dill (chopped)
  • 2 garlic cloves (minced)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lb baby potatoes (halved)
  • 1 tbsp butter (optional)
  • Lemon wedges (for serving)

Instructions

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

In a bowl, mix together the olive oil, lemon juice, lemon zest, chopped dill, minced garlic, salt, and black pepper.

  3. 3

Place the baby potatoes on a baking sheet. Drizzle half of the olive oil mixture over the potatoes and toss to coat evenly. Spread the potatoes out in a single layer.

  4. 4

Bake the potatoes in the preheated oven for about 10-15 minutes, until they are starting to soften.

  5. 5

While the potatoes bake, place the salmon fillets skin-side down on another baking sheet. Brush the remaining olive oil mixture over the salmon fillets.

  6. 6

After the potatoes have baked for 10-15 minutes, remove them from the oven and push them to the sides of the baking sheet. Place the salmon fillets in the center of the baking sheet. Return everything to the oven and roast for an additional 10-12 minutes, until the salmon is cooked through and the potatoes are golden brown.

  7. 7

If desired, add a small pat of butter on top of each salmon fillet before the final minutes of baking for extra richness.

  8. 8

Serve the baked salmon with the roasted potatoes and lemon wedges alongside. Enjoy your healthy meal!
