Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 cup pico de gallo
  • 2 tbsp vegetable oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Sour cream (optional, for serving)
  • Sliced jalapeños (optional, for serving)

Instructions

  1. 1

In a skillet over medium heat, add the vegetable oil.

  2. 2

Add the ground beef, break it apart, and cook until browned, about 5-7 minutes.

  3. 3

Stir in the cumin, chili powder, salt, and pepper. Cook for another 2 minutes until well combined.

  4. 4

Remove the beef from heat and set aside.

  5. 5

On one half of each tortilla, layer the cooked beef, shredded cheese, and a spoonful of pico de gallo. Fold the other half of the tortilla over.

  6. 6

In the same skillet, add a bit more oil if needed, and place each folded quesadilla in the skillet over medium heat.

  7. 7

Cook each quesadilla for 2-3 minutes on each side until the cheese is melted and the tortillas are golden brown.

  8. 8

Remove from skillet, cut into wedges, and serve with sour cream and sliced jalapeños, if desired.
