Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 medium onion, chopped
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 cup sour cream
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 8 oz egg noodles
  • Fresh parsley for garnish (optional)

Instructions

  1. 1

Cook the egg noodles according to package instructions. Drain and set aside.

  2. 2

In a large skillet, heat olive oil and butter over medium-high heat. Add the sliced beef and sear until browned on all sides. Remove the beef from the skillet and set aside.

  3. 3

In the same skillet, add the chopped onion and sauté until translucent. Then, add the sliced mushrooms and cook until they are golden brown.

  4. 4

Stir in the minced garlic and cook for another minute until fragrant.

  5. 5

Return the beef to the skillet and add the beef broth and Worcestershire sauce. Bring to a simmer and cook for 5 minutes.

  6. 6

Reduce heat to low. Stir in the sour cream and Dijon mustard. Mix well until creamy and heated through. Season with salt and pepper to taste.

  7. 7

Serve the beef stroganoff over the cooked egg noodles. Garnish with fresh parsley if desired.
