Ingredients

  • 1 lb beef sirloin, sliced into thin strips
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 3 cloves garlic, minced
  • 1 inch piece fresh ginger, grated
  • 3 tbsp soy sauce (gluten-free)
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. 1

In a bowl, combine the sliced beef with cornstarch, soy sauce, and a pinch of salt and pepper. Let it marinate for about 10 minutes.

  2. 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

  3. 3

Add the marinated beef to the pan and stir-fry for 4-5 minutes, or until browned and cooked through. Remove the beef from the pan and set aside.

  4. 4

In the same pan, add another tablespoon of vegetable oil and then add the garlic and ginger. Stir-fry for about 30 seconds until fragrant.

  5. 5

Add the mixed vegetables to the pan and stir-fry for 3-4 minutes, or until they are crisp-tender.

  6. 6

Return the beef to the pan with the vegetables, and pour in the remaining soy sauce and sesame oil. Stir everything together and cook for another 2 minutes.

  7. 7

Serve the beef and vegetable stir-fry over cooked rice or noodles. Enjoy!
