Ingredients

  • โ€ข4 flour tortillas
  • โ€ข2 medium tomatoes, sliced
  • โ€ข8 oz fresh mozzarella cheese, sliced
  • โ€ข1/4 cup fresh basil leaves, chopped
  • โ€ข2 tbsp olive oil
  • โ€ข1 tsp balsamic vinegar (optional)
  • โ€ขSalt and pepper, to taste

Instructions

    On half of the tortilla, layer slices of tomatoes, mozzarella cheese, and basil leaves.

    Sprinkle with salt and pepper, and drizzle with balsamic vinegar if using.

    Fold the tortilla over to cover the filling and cook for 2-3 minutes until the bottom is golden brown.

    Carefully flip the quesadilla and cook for another 2-3 minutes until the cheese is melted and the other side is golden brown.

    Remove from skillet and let cool for a minute before slicing into wedges.
