Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
In a pot, bring 2 cups of water to a boil. Add the soaked rice and a pinch of salt. Cover and cook on low heat for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.

Taste and adjust seasoning if necessary. Remove from heat and garnish with chopped cilantro.
