Ingredients

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil

Instructions

  1. 1

Preheat the oven to 350°F (175°C).

  2. 2

In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened, about 3-4 minutes.

  3. 3

Add ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

  4. 4

Stir in the rice, beef broth, cream of mushroom soup, mixed vegetables, salt, pepper, and paprika. Bring to a simmer and cook for 5 minutes, stirring occasionally.

  5. 5

Transfer the mixture to a greased 9x13 inch baking dish. Spread evenly and top with shredded cheddar cheese.

  6. 6

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

  7. 7

Let cool for a few minutes before serving.
