Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach, fresh
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Sour cream (for serving)
  • Salsa (for serving)

Instructions

  1. 1

Heat olive oil in a large skillet over medium heat.

  2. 2

Add diced onion and bell pepper; sauté for 2-3 minutes until softened.

  3. 3

Stir in diced zucchini and sliced mushrooms; cook for another 3-4 minutes until vegetables are tender.

  4. 4

Add spinach, garlic powder, cumin, salt, and pepper; cook until spinach is wilted, about 1-2 minutes.

  5. 5

Remove the vegetable mixture from the skillet and set aside.

  6. 6

In the same skillet, place one tortilla, sprinkle with 1/2 cup shredded cheese, and add a portion of the vegetable mixture on top.

  7. 7

Top with another 1/2 cup of cheese and place a second tortilla on top.

  8. 8

Cook for 2-3 minutes until the bottom tortilla is golden brown; flip carefully and cook for another 2-3 minutes until the other side is golden and cheese is melted.

  9. 9

Remove from skillet, cut into wedges, and serve with sour cream and salsa.
