Ingredients

  • 1 kg chicken, cut into serving pieces (preferably drumsticks and thighs)
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 2 medium potatoes, peeled and cubed
  • 2 medium carrots, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup tomato sauce
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1/2 cup frozen peas (optional)

Instructions

  1. 1

In a large pot or deep skillet, heat the vegetable oil over medium heat.

  2. 2

Add the chopped onions and minced garlic. Sauté until the onions are translucent and garlic is fragrant.

  3. 3

Stir in the diced tomatoes and cook until softened, about 5 minutes.

  4. 4

Add the chicken pieces to the pot. Cook for about 5-7 minutes until the chicken is lightly browned.

  5. 5

Add the tomato sauce, chicken broth, and bay leaf. Stir well to combine. Season with salt and pepper.

  6. 6

Bring the mixture to a boil, then lower the heat to a simmer. Cover and cook for 15 minutes.

  7. 7

Add the cubed potatoes and sliced carrots to the pot. Stir and cover, cooking for another 10 minutes or until the vegetables are tender.

  8. 8

Finally, add the sliced bell peppers and peas (if using) and cook for an additional 5 minutes. Adjust seasoning to taste before serving.
