Ingredients

  • 2 chicken breasts (about 1 lb), thinly sliced
  • 4 cups broccoli florets
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving (optional)

Instructions

  1. 1

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

  2. 2

Add the sliced chicken to the pan and season with salt and pepper. Stir-fry for about 5-7 minutes or until the chicken is cooked through and lightly browned. Remove the chicken from the pan and set aside.

  3. 3

In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

  4. 4

Add the broccoli florets to the pan and stir-fry for 3-4 minutes until they are bright green and tender-crisp.

  5. 5

In a small bowl, whisk together the soy sauce, honey, cornstarch, and water until smooth. Pour this mixture into the pan with the broccoli and bring to a simmer.

  6. 6

Return the cooked chicken to the pan and stir to coat everything in the sauce. Cook for an additional 2-3 minutes until the sauce thickens.

  7. 7

Drizzle with sesame oil before serving. Serve the stir-fry over cooked rice or noodles if desired.
