Ingredients

  • 2 chicken breasts (about 1 lb)
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp vegetable oil
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 4 individual Vietnamese baguettes
  • 1 cup pickled carrots and daikon
  • 1 cucumber (sliced thinly)
  • 1 jalapeño (sliced thinly)
  • 1 cup fresh cilantro leaves
  • Mayonnaise (optional for spreading)
  • Salt (to taste)

Instructions

  1. 1

Preheat a skillet over medium-high heat.

  2. 2

In a bowl, combine soy sauce, fish sauce, sugar, garlic powder, and black pepper. Mix well.

  3. 3

Add the chicken breasts to the marinade and let it sit for about 5 minutes.

  4. 4

Add vegetable oil to the skillet. Once hot, add the marinated chicken breasts.

  5. 5

Cook the chicken for about 6-7 minutes on each side or until fully cooked and golden brown.

  6. 6

Remove the chicken from the skillet and let it rest for a few minutes before slicing it.

  7. 7

While resting, prepare the filling: slice the cooked chicken, and gather the baguettes, pickled veggies, cucumber, jalapeño, and cilantro.

  8. 8

Slice open the baguettes and spread mayonnaise on the inside if desired. Layer the sliced chicken, pickled veggies, cucumber slices, jalapeños, and cilantro inside the baguettes. Serve immediately.
