Ingredients

  • 1 cup jasmine rice
  • 4 cups chicken broth
  • 1 small onion, diced
  • 1 inch piece of fresh ginger, sliced
  • 2 chicken breasts (boneless, skinless)
  • 2 green onions, finely chopped
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. 1

Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

  2. 2

In a large pot, combine the rinsed rice, chicken broth, diced onion, sliced ginger, and chicken breasts. Bring to a boil over medium-high heat.

  3. 3

Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes until the chicken is cooked through and the rice has broken down to create a creamy consistency.

  4. 4

While the congee is cooking, check the chicken. Once cooked, remove the chicken breasts, shred them with two forks, and set aside.

  5. 5

Stir the shredded chicken back into the pot, along with the soy sauce and sesame oil. Season with salt and pepper to taste, and simmer for an additional 5 minutes.

  6. 6

To serve, ladle the congee into bowls and garnish with finely chopped green onions and additional ginger if desired. Enjoy warm.
