Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 lb chicken breast, diced
  • 1 cup frozen peas and carrots mix
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 green onions, chopped (for garnish)

Instructions

  1. 1

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

  2. 2

Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

  3. 3

In the same skillet, add the remaining tablespoon of oil and the minced garlic. Sauté for about 30 seconds until fragrant.

  4. 4

Add the frozen peas and carrots mix to the skillet, stirring for about 2-3 minutes until heated through.

  5. 5

Push the vegetables to the side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix with the vegetables.

  6. 6

Add the cooked rice to the skillet, along with the soy sauce, oyster sauce (if using), black pepper, and salt. Stir everything together until well combined and heated through, about 3-4 minutes.

  7. 7

Return the cooked chicken to the skillet, mixing it in with the rice and vegetables. Cook for an additional 2 minutes to heat through.

  8. 8

Garnish with chopped green onions before serving.
