Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup mole sauce (store-bought or homemade)
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups cooked white rice (for serving)
  • Fresh cilantro (for garnish, optional)
  • Lime wedges (for serving, optional)

Instructions

    Season chicken thighs with salt and pepper. Add them to the skillet, skin-side down, and sear until browned, about 5-7 minutes per side. Remove and set aside.
