Ingredients

  • 2 chicken breasts (about 1 lb), cooked and shredded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 tbsp olive oil
  • 4 large flour tortillas
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Instructions

    Add the diced onion and bell pepper, sautéing until soft, about 5 minutes.

    Stir in the shredded chicken, cumin, chili powder, salt, and pepper, cooking until heated through, about 3 minutes.

    Place a tortilla in a separate large skillet over medium heat.

    Sprinkle half of the tortilla with a mixture of both cheeses, then add a portion of the chicken and veggie mixture on top of the cheese.
