Ingredients

  • 2 chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving (optional)

Instructions

  1. 1

In a bowl, combine the sliced chicken, soy sauce, oyster sauce, and cornstarch. Mix well and let marinate for about 5 minutes.

  2. 2

Heat the olive oil in a large pan or wok over medium-high heat.

  3. 3

Add the marinated chicken to the pan and stir-fry for 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.

  4. 4

In the same pan, add garlic and ginger, stirring for about 30 seconds until fragrant.

  5. 5

Add the bell pepper, broccoli, carrot, and snap peas to the pan. Stir-fry the vegetables for about 3-5 minutes until they are tender but still crisp.

  6. 6

Return the cooked chicken to the pan and mix everything together. Cook for an additional 1-2 minutes, season with salt and pepper to taste.

  7. 7

Serve hot over cooked rice or noodles, if desired.
