Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped parsley
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 2 tbsp olive oil (for frying)
  • 1 cup plain yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste (for dip)

Instructions

  1. 1

In a large mixing bowl, combine the drained chickpeas, breadcrumbs, chopped onion, chopped parsley, cumin, paprika, salt, black pepper, and egg.

  2. 2

Using a fork or potato masher, mash the ingredients together until well combined but still slightly chunky.

  3. 3

Form the mixture into small patties, about 2-3 inches in diameter.

  4. 4

Heat the olive oil in a frying pan over medium heat. Once hot, add the chickpea patties in batches, making sure not to overcrowd the pan.

  5. 5

Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

  6. 6

In a separate bowl, mix the yogurt, lemon juice, minced garlic, and season with salt and pepper to taste to create the dip.

  7. 7

Serve the crispy chickpea fritters warm with the tangy yogurt dip on the side.
