Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp vegetable oil
  • 5 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp lime juice
  • Salt to taste
  • 2 cups jasmine rice
  • 4 cups water
  • 2 green onions, chopped (for garnish)
  • Fresh cilantro (for garnish, optional)

Instructions

  1. 1

Rinse the jasmine rice under cold water until the water runs clear.

  2. 2

In a medium saucepan, combine the rinsed rice and 4 cups of water. Bring to a boil over medium-high heat.

  3. 3

Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

  4. 4

In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat.

  5. 5

Add the minced garlic and red pepper flakes to the skillet, sauté for about 30 seconds until fragrant but not browned.

  6. 6

Add the shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side.

  7. 7

Stir in the soy sauce, oyster sauce, lime juice, and season with salt to taste. Cook for another 1-2 minutes to combine flavors.

  8. 8

Fluff the cooked rice with a fork and serve it on plates topped with the chili garlic shrimp. Garnish with chopped green onions and fresh cilantro if desired.
