  • 4 chicken breasts (about 1.25 lbs)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cups fresh spinach
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 1 cup uncooked white rice
  • 2 cups water or broth for rice
