Ingredients

  • 2 pork loin chops (about 1 inch thick)
  • 1 apple, diced
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1/2 cup breadcrumbs
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. 1

Season the pork loin chops with salt and pepper on both sides.

  2. 2

In a skillet, heat the olive oil over medium heat. Add the pork chops and cook until golden brown and crispy, about 5-7 minutes on each side. Remove from skillet and set aside.

  3. 3

In the same skillet, heat the butter over medium heat, add the diced apple, brown sugar, and cinnamon. Cook until the apples are tender, about 5 minutes.

  4. 4

While the apples are cooking, spread Dijon mustard on one side of each pork chop and press them into the breadcrumbs to coat.

  5. 5

Once the apples are done, plate the pork chops, top with the apple compote, and garnish with chopped parsley.
