Ingredients

  • 2 cups cooked, shredded chicken
  • 4 large flour tortillas
  • 1 cup shredded cheese (Mexican blend)
  • 1/2 cup black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. 1

Heat the olive oil in a large skillet over medium heat.

  2. 2

Add the diced bell peppers and cook for 3-4 minutes until softened.

  3. 3

Stir in the shredded chicken, black beans, corn, garlic powder, cumin, salt, and pepper. Cook until heated through, about 3-5 minutes.

  4. 4

Place two flour tortillas in the skillet over the chicken mixture, and sprinkle half of the cheese on top.

  5. 5

Cover with the remaining two tortillas, then sprinkle the rest of the cheese on top.

  6. 6

Cook for about 3-4 minutes until the bottom tortillas are golden brown, then carefully flip the quesadilla and cook for another 3-4 minutes until the cheese is melted and the other side is golden brown.

  7. 7

Remove from heat, cut into wedges, and garnish with fresh cilantro before serving.
