Ingredients

  • 500g firm white fish (like cod or tilapia), cut into chunks
  • 1 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2-3 green chilies, slit (adjust to taste)
  • 2 tsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 400ml coconut milk
  • 1 cup diced tomatoes (fresh or canned)
  • Salt, to taste
  • Fresh cilantro leaves, for garnishing
  • Lemon wedges, for serving

Instructions

  1. 1

Heat the vegetable oil in a large pan over medium heat.

  2. 2

Add the chopped onion and sauté until it turns golden brown.

  3. 3

Stir in the minced garlic, grated ginger, and green chilies. Cook for 2 minutes until fragrant.

  4. 4

Add the curry powder, turmeric powder, and cumin seeds. Stir continuously for about 1 minute.

  5. 5

Pour in the diced tomatoes and coconut milk. Mix well and let it simmer for about 5 minutes.

  6. 6

Carefully add the fish chunks to the simmering curry. Cook for 10-15 minutes or until the fish is cooked through and flakes easily.

  7. 7

Season with salt to taste and garnish with fresh cilantro leaves before serving.

  8. 8

Serve hot with lemon wedges on the side. Enjoy your delicious fish curry!
