Ingredients

  • 2 lbs goat meat, cut into pieces
  • 2 tbsp vegetable oil
  • 2 large onions, finely chopped
  • 5 cloves garlic, minced
  • 2 inches ginger, minced
  • 2 green chilies, slit
  • 2 tsp cumin seeds
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • 2 tsp garam masala
  • 1 tsp red chili powder (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk or yogurt (for creaminess)
  • Salt to taste
  • Fresh cilantro for garnish
  • Water as needed

Instructions

  1. 1

In a large pot, heat vegetable oil over medium heat.

  2. 2

Add finely chopped onions and sauté until golden brown, about 8-10 minutes.

  3. 3

Stir in minced garlic, ginger, and green chilies. Cook for an additional 2-3 minutes until fragrant.

  4. 4

Add the cumin seeds, coriander powder, turmeric powder, garam masala, and red chili powder. Stir and cook the spices for 1-2 minutes.

  5. 5

Add the goat meat pieces to the pot, stirring to coat them well with the spice mixture. Sear the meat for about 5-7 minutes.

  6. 6

Pour in the diced tomatoes and mix well. Allow to simmer for 5 minutes, letting the tomatoes soften.

  7. 7

Add coconut milk or yogurt and salt to taste, stirring to combine. Add water to reach desired consistency.

  8. 8

Cover the pot and let the curry simmer on low heat for 45 minutes to 1 hour, until the goat meat is tender. Stir occasionally and add more water if necessary. Garnish with fresh cilantro before serving.
