Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 whole grain pitas
  • 1 cup chopped cucumbers
  • 1 cup chopped tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. 1

In a bowl, combine the chickpeas, cucumbers, tomatoes, red onion, and Kalamata olives.

  2. 2

In a separate small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.

  3. 3

Pour the dressing over the chickpea and vegetable mixture, and toss gently to combine.

  4. 4

Warm the pitas in the microwave for about 30 seconds, or in a dry skillet over medium heat for 1-2 minutes.

  5. 5

Cut the pitas in half to form pockets, and fill each pita with the chickpea mixture.

  6. 6

Top each filled pita with a sprinkle of feta cheese and a dollop of Greek yogurt.

  7. 7

Garnish with fresh parsley if desired, and serve immediately.
