Ingredients

  • 8 slices of bread
  • 4 slices of cheddar cheese
  • 4 slices of mozzarella cheese
  • 4 tbsp butter
  • 4 cups canned tomato soup (or homemade)
  • 1 tsp dried basil (optional)
  • Salt and pepper to taste

Instructions

    Heat a skillet over medium heat.

    Spread 1 tbsp of butter on one side of each bread slice.

    Place 4 slices of bread, butter side down, on the skillet.

    Layer each sandwich with 1 slice of cheddar and 1 slice of mozzarella cheese per sandwich, and top with remaining bread slices (butter side up).

    Cook until the bread is golden brown, about 2-3 minutes, then flip and cook the other side until golden and cheese is melted, about another 2-3 minutes.

    While the sandwiches are cooking, heat the tomato soup in a separate pot over medium heat, stirring occasionally.
