Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon (juiced)
  • 2 cups mixed vegetables (e.g. bell peppers, zucchini, and broccoli)
  • 1 tbsp balsamic vinegar (optional)
