Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 lemon (juice and zest)
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh oregano, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Mixed greens (for salad)
  • 1/2 cucumber, sliced
  • 1/2 red bell pepper, sliced
  • 1/4 red onion, thinly sliced
  • Your choice of salad dressing (balsamic vinaigrette recommended)

Instructions

    In a mixing bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, chopped parsley, chopped oregano, salt, and pepper to make the marinade.

    Place the chicken breasts in the marinade and coat well. Cover and refrigerate for at least 30 minutes (up to 2 hours).
