Ingredients

  • 4 chicken breasts
  • 3 red bell peppers
  • 1 yellow bell pepper
  • 1 large onion
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt to taste
  • Black pepper to taste

    In a large bowl, mix 3 tbsp of olive oil, balsamic vinegar, minced garlic, oregano, basil, salt, and pepper to create the marinade.

    Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.

    While the chicken marinates, slice the bell peppers and onion into strips.

    In a separate bowl, toss the sliced vegetables with the remaining 1 tbsp of olive oil, salt, and pepper.

    Place the marinated chicken on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    During the last 10 minutes of grilling the chicken, add the sliced bell peppers and onion to a grill basket or directly on the grill. Roast until they are tender and slightly charred.
