Ingredients

  • 1 large zucchini
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small red onion
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • 4 slices of ciabatta bread
  • 8 oz fresh mozzarella cheese, sliced
  • 2 tbsp pesto (optional)

Instructions

    In a bowl, toss the sliced vegetables with olive oil, salt, and pepper.
