Ingredients

  • โ€ข1 zucchini, sliced into thick rounds
  • โ€ข1 bell pepper (any color), cut into 1-inch squares
  • โ€ข1 red onion, cut into wedges
  • โ€ข8 cherry tomatoes
  • โ€ข1 cup mushrooms, whole or halved if large
  • โ€ข2 tbsp olive oil
  • โ€ข2 tsp balsamic vinegar
  • โ€ข1 tsp garlic powder
  • โ€ข1 tsp dried oregano
  • โ€ขSalt and pepper to taste
  • โ€ขWooden or metal skewers, soaked in water if wooden

Instructions

  1. 1

Preheat the grill to medium-high heat.

  2. 2

In a large bowl, combine olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper.

  3. 3

Add the sliced zucchini, bell pepper, red onion, cherry tomatoes, and mushrooms to the bowl and toss until all vegetables are evenly coated with the marinade.

  4. 4

Thread the marinated vegetables onto the skewers, leaving a little space between each piece for even cooking.

  5. 5

Place the vegetable skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.

  6. 6

Once done, remove the skewers from the grill and let them rest for a couple of minutes before serving.

  7. 7

Serve warm as a side dish or as a main vegetarian option.
