Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 3 tbsp harissa paste
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 large red bell pepper, cut into squares
  • 1 large zucchini, sliced
  • Wooden or metal skewers

Instructions

  1. 1

Preheat your grill to medium-high heat.

  2. 2

In a mixing bowl, combine harissa paste, olive oil, lemon juice, garlic powder, cumin, salt, and pepper.

  3. 3

Cut the chicken breasts into 1-inch cubes and add them to the marinade. Toss to coat well and let it marinate for at least 10 minutes.

  4. 4

While the chicken marinates, prepare your skewers. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.

  5. 5

Thread the marinated chicken, bell pepper squares, and zucchini slices onto the skewers alternately.

  6. 6

Place the skewers on the preheated grill and cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

  7. 7

Remove from the grill and let them rest for a few minutes before serving.
