Ingredients

  • 2 cans (15 oz each) of chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • Fresh parsley for garnish

    In a mixing bowl, combine the drained chickpeas, olive oil, garlic powder, onion powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper. Toss until chickpeas are well coated.
