Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 2 tsp brown sugar
  • 1 tsp allspice
  • 1 tsp thyme (dried)
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lime (juiced)
  • 1 ripe mango (diced)
  • 1/2 red onion (finely chopped)
  • 1 red bell pepper (diced)
  • 1 jalapeño (seeded and minced)
  • 1/4 cup fresh cilantro (chopped)
  • Salt and pepper to taste

Instructions

    In a small bowl, combine brown sugar, allspice, thyme, paprika, cayenne pepper, salt, and black pepper to make the jerk spice rub.
