Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs
  • 2 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 8 small soft tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced cucumbers
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. 1

In a bowl, mix soy sauce, gochujang, honey, sesame oil, garlic, and ginger to create the marinade.

  2. 2

Add the chicken thighs to the marinade, ensuring they are well coated. Let it marinate for at least 10 minutes.

  3. 3

Heat a skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes on each side, until fully cooked and slightly charred.

  4. 4

Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

  5. 5

Warm the tortillas in a separate skillet or microwave until pliable.

  6. 6

Assemble the tacos by placing a few strips of chicken on each tortilla, then top with shredded cabbage, cucumbers, tomatoes, and green onions.

  7. 7

Drizzle with lime juice and sprinkle with sesame seeds if desired. Serve immediately.
