Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs
  • 2 stalks of fresh lemongrass, finely chopped
  • 3 cloves of garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil
  • 1 tsp black pepper
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions

  1. 1

Cut the chicken thighs into bite-sized pieces and place in a large bowl.

  2. 2

In a separate bowl, mix together the chopped lemongrass, garlic, ginger, soy sauce, fish sauce, brown sugar, vegetable oil, and black pepper until combined.

  3. 3

Pour the marinade over the chicken pieces, ensuring they are thoroughly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

  4. 4

Preheat your grill to medium-high heat.

  5. 5

Thread the marinated chicken onto the skewers, leaving a little space between each piece to allow for even cooking.

  6. 6

Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F / 75°C).

  7. 7

Remove from the grill and let the skewers rest for a few minutes before serving.
