Ingredients

  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced

  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup couscous
  • 2 tbsp olive oil
  • 2 cups water
  • Fresh parsley, chopped (for garnish)

Instructions

    In a large pot, heat 2 tablespoons of olive oil over medium heat.

    Add the diced onion, garlic, carrot, and celery to the pot. Sauté for about 5 minutes, until the vegetables are softened.
