Ingredients

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 2 ripe mangoes, peeled and diced
  • 2 tbsp olive oil
  • 1 bell pepper, thinly sliced
  • 1 medium red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 cups broccoli florets
  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 2 tsp lime juice
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. 1

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

  2. 2

Add the shrimp, season with salt and pepper, and stir-fry for 2-3 minutes until they turn pink. Remove the shrimp from the skillet and set aside.

  3. 3

In the same skillet, add another tablespoon of olive oil. Add the onion, bell pepper, garlic, and ginger. Stir-fry for about 3-4 minutes until vegetables are tender.

  4. 4

Add the broccoli florets and continue stir-frying for another 2-3 minutes until they are bright green and slightly tender.

  5. 5

Stir in the diced mango, soy sauce, and lime juice. Return the cooked shrimp to the skillet and stir well to combine all ingredients.

  6. 6

Cook for an additional 2-3 minutes until everything is heated through and coated in sauce. Adjust seasoning with salt and pepper if needed.

  7. 7

Serve hot, garnished with fresh cilantro.
