Ingredients

  • 1 block (14 oz) firm tofu
  • 1 tbsp miso paste (any type you prefer)
  • 1 tbsp soy sauce
  • 2 tbsp olive oil
  • 1/2 cup chopped onions
  • 1 cup chopped spinach or kale
  • 1/4 cup chopped bell pepper (optional)
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 2 slices of bread (for toast)

Instructions

  1. 1

Drain the tofu and press it gently to remove excess moisture.

  2. 2

Crumble the tofu into bite-sized pieces in a bowl.

  3. 3

In another bowl, mix the miso paste, soy sauce, and garlic until smooth.

  4. 4

Heat olive oil in a non-stick skillet over medium heat.

  5. 5

Add the onions and bell pepper to the skillet. Sauté until onions are translucent, about 3 minutes.

  6. 6

Add the crumbled tofu to the skillet. Stir in the miso mixture and cook for another 5 minutes, stirring occasionally.

  7. 7

Add chopped spinach or kale and cook until wilted, about 2 minutes. Season with salt and pepper to taste.

  8. 8

While the scramble is cooking, toast the slices of bread. Serve the miso tofu scramble on the toast.
