Ingredients

  • 8 medium flour tortillas
  • 2 cups fresh spinach, chopped
  • 2 cups mushrooms, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Salsa for serving

Instructions

  1. 1

Heat 1 tablespoon of olive oil in a skillet over medium heat.

  2. 2

Add the diced onion and sauté until translucent, about 3-4 minutes.

  3. 3

Stir in the mushrooms, garlic, and cumin; cook until mushrooms are soft, about 5 minutes.

  4. 4

Add the chopped spinach and cook until just wilted, about 2 minutes. Season with salt and pepper to taste.

  5. 5

Remove the vegetable mixture from the skillet and set aside.

  6. 6

In the same skillet, heat another tablespoon of olive oil over medium heat. Place a tortilla in the skillet and sprinkle half of it with cheese.

  7. 7

Spoon some of the vegetable mixture over the cheese, and then top with more cheese. Fold the tortilla in half.

  8. 8

Cook for 2-3 minutes on each side until golden and the cheese is melted. Repeat with remaining tortillas and filling.

  9. 9

Slice quesadillas into wedges and serve with salsa.
