Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup beef broth
  • 1 tbsp olive oil
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro

Instructions

  1. 1

In a large pot, heat 1 tablespoon of olive oil over medium heat.

  2. 2

Add diced onion and bell pepper to the pot. Sauté for about 5 minutes until the onion is translucent.

  3. 3

Stir in minced garlic and cook for another minute until fragrant.

  4. 4

Add ground beef to the pot and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

  5. 5

Drain any excess fat from the pot. Then, stir in the chili powder, cumin, smoked paprika, salt, and pepper.

  6. 6

Pour in the crushed tomatoes, kidney beans, black beans, and beef broth. Stir to combine all ingredients well.

  7. 7

Bring the mixture to a simmer, then reduce heat to low. Cover and let it cook for about 20 minutes, stirring occasionally.

  8. 8

Serve hot with optional toppings such as shredded cheese, sour cream, or chopped green onions.
