Ingredients

  • 200g rice noodles
  • 300g shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 large eggs
  • 100g bean sprouts
  • 50g crushed peanuts
  • 4 green onions, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon tamarind paste
  • 1 tablespoon sugar
  • 1 teaspoon chili powder
  • Lime wedges for serving
  • Fresh cilantro for garnish (optional)

Instructions

  1. 1

Soak the rice noodles in hot water for about 10 minutes until softened, then drain and set aside.

  2. 2

In a large pan or wok, heat the vegetable oil over medium-high heat and add the minced garlic, sautéing for about 30 seconds.

  3. 3

Add the shrimp to the pan and cook until they turn pink, about 3-4 minutes, then push them to one side.

  4. 4

Crack the eggs into the pan and scramble them until fully cooked, then combine them with the shrimp.

  5. 5

Add the soaked noodles to the pan along with the fish sauce, tamarind paste, sugar, and chili powder. Toss everything together for about 2-3 minutes until well-coated and heated through.

  6. 6

Stir in the bean sprouts and half of the green onions, cooking for another 1-2 minutes.

  7. 7

Remove from heat and serve topped with crushed peanuts, the remaining green onions, lime wedges, and fresh cilantro (if using).

  8. 8

    Enjoy your Pad Thai hot!
