Heat olive oil in a skillet over medium heat.
Place one tortilla in the skillet, and spread half of the chicken mixture evenly over the tortilla. Sprinkle with half of the cheese, then top with another tortilla.
Cook for about 3-4 minutes, until the bottom tortilla is golden brown. Carefully flip and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
