Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 4 medium flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Sour cream for serving (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. 1

In a mixing bowl, combine shredded chicken, salsa, chili powder, cumin, garlic powder, onion powder, and salt. Mix well until the chicken is evenly coated.

  2. 2

Heat olive oil in a skillet over medium heat.

  3. 3

Place one tortilla in the skillet, and spread half of the chicken mixture evenly over the tortilla. Sprinkle with half of the cheese, then top with another tortilla.

  4. 4

Cook for about 3-4 minutes, until the bottom tortilla is golden brown. Carefully flip and cook for another 3-4 minutes until the other side is golden and the cheese is melted.

  5. 5

Transfer the quesadilla to a cutting board and cut into wedges. Repeat with the remaining tortillas and filling.

  6. 6

Serve warm with sour cream and chopped cilantro for garnish, if desired.
