Ingredients

  • 2 large bell peppers (red or yellow)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 whole wheat tortillas
  • 1 cup store-bought hummus
  • 1 cup fresh spinach leaves
  • 1/2 cup crumbled feta cheese (optional)
  • 1/2 cup sliced cucumbers (optional)
  • Sliced jalapeños (optional, for extra spice)

Instructions
